Anyway, I made Mexican Lasagna last night. It was awesome! I got the recipe from my "friend-that-doesn't-know-she's-my-friend" Annie of annies-eats.com. You can find the recipe here. Those of you who know Ben well know that he loves meat in his dinners...and lunches...and breakfasts if we ate breakfast. I was a little hesitant to make this meat-free meal but my trust in Annie was enough to push me over the edge. I'm really glad I went for it because it was great. I'm really starting to love black beans and Mexican food is always golden in our house. Not only was the fresh lasagna creamy and flavorful with corn, tomatoes, cilantro, beans, garlic, oregano and cheese, but the leftovers were almost as delicious and equally satisfying. (We didn't even miss the meat). I highly recommend this recipe to all my fellow cooks out there!
