The Fourth Anniversary = Red Velvet Oreos

Today is the fourth anniversary of the day I married my wonderful husband, Ben.  We both took off work to spend the entire day together, which was especially special since I have been gone for most of the summer.

Anyway, I wanted to make him someting special to snack on today and the rest of the week in honor of our love.  I pulled out a recipe I've been saving since Valentine's Day: Homemade Red Velvet Oreos.  I found the recipe on this amazing food blog called Pink Parsley.  You should definitely check it out.

I had never made anything red velvet before and was very happy with the results.  I was able to use my Dutch-processed cocoa powder and buttermilk powder--two ingredients that don't get a lot of love in our house.  The cookies turned out a big bigger than I intended so I will adjust my scoop size in the future.  I also was overly conservative with the amount of cream filling I used on each cookie--I was nervous I would run out.  In reality, I had a considerable amount left over, which sadly meant I needed to eat it plain, with a spoon, all by myself.  Ben is sad he wasn't around for that part.

The cookies turned out absolutely delicious and are even better paired with a glass of ice cold milk.
